Looking for a refreshing spread/dip to bring to a summer BBQ? Look no further! This little cheese mix is so tasty – the fresh mint, the toasty almonds, the sweet dates, and the creamy feta cheese – all blend together really well. I could eat a whole bowl of this with a spoon! You can eat it on pita bread, crackers or as a side with a Middle Eastern style dinner. I ate it with some grilled chicken and plums (recipe coming soon!).
One thing that I must insist on for this recipe is that you don’t use pre-crumbled feta cheese. I used a block of imported feta and there really is a difference in taste and creaminess.
This makes enough for a small get-together, but for a larger party, you may want to double the recipe.
Date and feta spread with roasted almonds and mint
Preptime: 15 minutes
8 pitted dates, diced
3/4 cup feta cheese
2 handfuls raw almonds (about 1/2 a cup)
1 tbsp mint, minced
Salt and pepper
Zest 1 lemon
Juice of half a lemon
1 tbsp olive oil
Toast the almonds for 10 minutes in a toaster oven. Roughly chop the almonds. Place the dates, feta cheese, almonds and mint in a bowl. Drizzle with honey and olive oil, sprinkle with salt and pepper, and add the zest and lemon juice. Mix it all together, adjust seasonings to your liking.
