Heirloom tomato and cucumber salad three ways

It’s peak season for my tomato and cucumber plants, so I have a lot of them I have to figure out what to do with every day. One of my favorite things to do is make a simple salad with just cucumbers and tomatoes. They are versatile ingredients that you can adapt to different flavors. My favorite styles are Greek, Italian and Japanese. Just by changing the type of vinegar and spices, you can make all three different flavors with the same base of tomatoes and cucumber.

These recipes will not include exact amounts because I don’t measure anything for these salads. I mix everything together, taste and adjust as needed.


Heirloom tomato and cucumber salad

Prep time: 10 minutes

For every salad:

Cucumbers, diced and peeled if desired
Tomatoes (a variety of cherry, grape, slicer, ugly, etc. or all the same kind)
Olive oil
Salt and pepper

Greek style:

Feta cheese
Red wine vinegar

Italian style:

Feta cheese or chunky cut fresh buffalo mozzarella
Fresh basil
Balsamic vinegar

Japanese style:

Toasted sesame oil
Rice vinegar
Toasted sesame seeds
