Heirloom tomato salad with black olives, red pepper and barrel aged feta

I made this salad as a side for my pizza night because I had some left over toppings that would combine well to make a Greek style salad. It ended up being very tasty! As I mentioned in the pizza night post, I bought some “fancy” barrel aged feta cheese at a cheese importer warehouse. It was definitely worth the price!

Heirloom tomato salad with black olives, red pepper and barrel aged feta

Prep time: 15 minutes 
Serves: 4 as a side

Pint of mixed cherry and grape heirloom tomatoes, cut in half or quartered
1/2 red bell pepper, diced
1/2 can black olives, roughly chopped
1/4 cup crumbled barrel aged feta
1 shallot, sliced
1/2 tsp dried oregano
Olive oil
Red wine vinegar
Salt and pepper

Mix everything together in a salad bowl. Taste and adjust vinegar and seasonings as needed.
