Mom’s “Health Salad” – Recipes from home

Growing up, my Mom would always name recipes that aren’t healthy with “health” in front of them. For example, when she cooks bacon, eggs and toast for breakfast, she calls it a “health breakfast”. Another example is this salad – with processed deli meat and cheese in it, it is not exactly “healthy” yet it is called Mom’s Health Salad. I made this with her over Thanksgiving because we had left over cheese and meat. I remember she would make it for me on the weekends. My Mom doesn’t really cook, so it’s one of the things she can make and that we would make together. It does have a lot of vegetables in it, so it’s not that bad for you! I think it would be good with some salami and those sweet pickled peppers.

Mom’s “Health Salad”

Prep time: 15 minutes
Serves: 2 

3 handfuls salad green mix
2-3 slices of ham, torn into small pieces
1/4 cup cubed mozzarella cheese
1/2 cucumber, peeled and chopped
1/2 bell pepper, diced
1 carrot, diced
1 shallot, sliced
handful of cherry tomatoes


2 tbsp olive oil
1 tbsp flas seed oil
3 tbsp red wine vinegar
Pinch of oregano
Salt and pepper

Add all the ingredients for the salad in a bowl. Whisk the ingredients for the dressing together and add to the salad. Toss and serve.
