Grilled chicken, rice and kale bowl with oranges and green sauce

Here is another recipe adapted from Cooking Light Magazine from when my Mom gave me 1000 old magazines. I thought it was pretty good, quick and easy to make. Just grilled some chicken, make some rice, cook some kale and throw it all together with sauce and oranges. The oranges go really well with everything and provide a refreshing bite.

This could be a good recipe for a meal prep lunch deal. I don’t have much else to say about it, or as Forrest Gump would say, “That’s all I have to say about that.”


Grilled chicken, rice and kale bowl with oranges and green sauce

Prep time: 15 minutes
Cook time: 35 minutes 
Serves: 4

For the chicken:

1 lb. of chicken breast
Juice of half a lemon
Olive oil
Squeeze of dijon mustard
1 garlic clove, minced
Salt and pepper

For the rice:

1.5 cups brown rice
Olive oil
1/2 yellow onion, diced
2 cloves garlic, minced
1/2 cup chopped parsley
salt and pepper

For the kale:

1 large bunch dino kale
Olive oil
Salt and pepper

For the green sauce:

1/2 avocado
Handful of cilantro
Handful of parsley
1/4 cup olive oil
1/4 cup apple cider vinegar
Salt and pepper
Pinch hot chili flakes

To serve:

Sliced oranges
Sliced avocado

Combine the chicken with lemon, olive oil, mustard, salt and pepper and let sit for about 30 minutes at room temperature or longer in the fridge. Cook on the grill or in a skillet on the stove.

Cook the rice according to the package instructions. Heat some olive oil in a cast iron skillet (or other skillet). Cook the onion for 7 minutes or until soft. Add the garlic and cook for another minute. Add the parsley and the cooked rice. Cook for a few more minutes.

Heat some olive oil in another skillet and cook the kale until just tender and starting to wilt. Remove from heat.

To make the green sauce, combine everything in a blender and blend until smooth. Add water until it gets to the right consistency. Taste and adjust as needed.

Slice the oranges by cutting round sections and cutting the rind off of the sections.

Put the rice in a bowl, top with the chicken, kale, oranges and avocado. Top with green sauce.
